On weekday mornings, my mom leaves for work around 7:50 or 8 in the morning, but I don’t leave for class until around 8:45, so I usually opt to help her get ready in the morning by making a delicious breakfast to help her get through the school day with those oh so lovely high school students. It’s usually either a jar or overnight oats or a big ‘ole green smoothie because these are easily taken to be eaten at school. The smoothies are a popular choice, especially since we ordered those fancy jar lids with the straws! Like anyone, she has her favorite smoothie flavors: pineapple mango and chocolate cherry, but really who doesn’t love those flavors? This morning, however, I decided to make her an apple pie smoothie because, well, we still have a butt load of apples in the fridge. I’ve been a baking fool lately and we still have a fridge full of apples!

I stole a little sip of this one before popping a lid on it and oh my…. it was so delicious I would’ve made one for myself if I hadn’t already started making my oatmeal! I even got a text after my first class saying it was delicious! It was like having dessert for breakfast, which is definitely necessary when sending someone off to high school for the day 😛 I hadn’t had my first slice of apple pie until a couple months ago and this tastes just like that pie in liquid form. I definitely see many more of these smoothies in our future! Maybe even for dessert next time.

You could make this any time of day, but nothing ensures a good day like an apple pie in a glass…err…jar. This smoothie is nice and creamy, perfectly apple-y, sweet, and tastes like fall in a glass! The pecans in it add that nice buttery flavor that the crust of an apple pie has and the apple butter just adds to all the wonderful fall flavors. This smoothie is perfect for breakfast, lunch, dinner (if you roll that way), or a nice post-workout or mid-day snack! You could even add your favorite protein powder (preferably vanilla or unflavored) if you are enjoying it after a workout.

Apple Pie Green Smoothie

Makes 4 Cups

Ingredients:

  • 1 Cup Non-Dairy Milk
  • 2-3 Apples*
  • 1 Frozen banana (or regular, it just won’t be as thick and creamy)
  • 1/4 Cup Halved Pecans**
  • 1/2 Teaspoon cinnamon
  • 1/8 Teaspoon Allspice
  • 1 Tablespoon Apple Butter
  • 1/2 Teaspoon Vanilla
  • 1-2 Tablespoons Pure Maple Syrup
  • 2 Cups Spinach or Kale
  • 1 Tablespoon Ground Flax Seeds

 

Directions:

Wash, core, and quarter/slice your apples. Add all ingredients to a high powered blender and blend until smooth and creamy. Top with an extra sprinkle of cinnamon and enjoy your little glass of fall.

Notes:

*I used 3 pretty small apples, so 2 large or medium apples should do the trick!

**You can certainly leave the pecans out, but they really add some depth to the smoothie and make it taste more like an actual pie. I highly recommend adding them.
