April All Natural Day 13

Day 13, another Monday. When I got up for my run I was thinking “oh man, I’m going to have some chocolate banana oatmeal when I get home!” Yeah, that didn’t happen. I peeled the banana and instantly wanted banana bread oatmeal instead. Oopsie. My first class of the day was cancelled, so I didn’t have to leave the house until around 10:30 or so, which was super nice. I got to spend the morning working on some homework and relaxing a bit with Rory after breakfast before actually having to do anything with my day.

I thought it was just going to be another boring Monday, but after being on campus for a whopping 10 minutes, a security guard came in and told us we had to evacuate the building. The whole campus got evacuated because someone called the school and told them a bomb was going to go off. This happened about 3 times when I was in high school, but we never actually took it seriously. I mean, we evacuated and everything, but everyone knew there wasn’t actually a bomb anywhere. For some reason it seemed a bit more scary in college… But anyway, they cleared all the buildings within an hour and a half, the campus re-opened, and everything returned to normal!

While I was standing in the parking lot waiting for the police to search all the buildings, I ate my lunch, which was leftovers of black eyed peas, sweet potatoes, and collard greens. I got a few funny looks, but most people were just jealous that I had food since they couldn’t get into the student center to grab some lunch and it was already 12pm. Then, right as I took my last few bites we were allowed to go back in the buildings and classes resumed. Right in time for Chemistry Lab… I thought it would be an extremely boring lab, but it ended up being really interesting because we started electrochemistry. Plus we got to play with copper, which is one of my favorites because it’s such a pretty blue!

Lab only lasted 2 hours today, so I went home and made myself another Orange, Peach, Mango smoothie and sat outside in the sun with Rory for a bit. We played with the frisbee a bit too. Then dinner time rolled around, so we cleaned up and headed inside to cook. Since it was Pasta Monday, I decided to make the “You-Won’t-Be-Single-For-Long Pasta Carbonara with Shiitake Bacon” from Chloe’s Vegan Italian Kitchen. The sauce was a bit too tofu-y for my liking, so I added a bit more garlic powder, onion powder, salt, nutritional yeast, and a teeeeeeny bit of maple syrup to bring it all together. It turned out pretty yummy and the shiitake bacon was fantastic!

A bit later, after some more homework, I had a pink lady apple with coconut nectar drizzled all over it. I’m not sure if drizzled is the right word here… the apple chunks we more drowned in coconut nectar because it’s just so dang delicious! I also had a spoonful of peanut butter with coconut nectar too because that is my favorite combination of all time. Something about the sweet tanginess of the coconut nectar with the saltiness of the peanut butter. It was a match made in heaven!
