I missed a few days… I do have a valid reason though: I had a Chemistry test on Thursday that required my attention, as well as a final paper due soon for Social Ethics. For some reason I decided to commit to doing daily posts right at the end of the semester, which is not the best idea. On the other hand, I’ve made pretty good progress on all my work, including getting to page 4 on my social ethics paper, which I’m getting really into. We got to choose any topic that is a social issue in today’s society and apply an ethical theory to it to determine which side of the argument is the most ethical. I am doing mine on the ethics of gender roles and using Deontology to argue against gender roles being a thing. I’m actually really enjoying writing it so far, with the exception of some of the arguments I’ve come across that argue for gender roles…

So anyway, food wise the week hasn’t really been too interesting… this morning I switched it up and had oatmeal with an apple, 1/4 cup golden raisins, cinnamon, and molasses. It was so good, but I used a whole apple so it was more like an apple with a bit of oatmeal instead of oatmeal with apples. I spent my whole morning doing dishes and other various household chores, then took a break to have some lunch, which was 3 little baby sweet potatoes (enough to equal one normal sized one), 2 oranges, and a piece of toast with peanut butter and coconut nectar, my favorite combination.

After lunch I worked on more homework and got a pretty significant amount done, finishing my statistics homework, most of my 2 chemistry post-labs, and more written for my social ethics paper. Once 3pm rolled around, I decided it was about time to go for a run. I’ve been wanting to up my mileage more and it was 75 degrees this afternoon, so Rory and I went for a nice 6 mile run. The last time I ran 6 miles was the fall of 2012, when I had been out of cross country for most of the season due to shin splints, yet decided to run the 10k we had signed up for anyway. I ran that race in 1 hour 7 minutes, which I considered to be pretty good having not run in about 2 months. Today, I ran 6.01 miles (a 10k is 6.2) in 1 hour 3 minutes, so I was pretty dang proud of myself.

I rewarded myself for running that far with a giant mountain of mashed potatoes and steamed broccoli for dinner. However, in honor of National Cheeseball Day, I took the best cheeseball recipe ever from Vedged Out and turned it into cheeseball sauce instead by doing 1 1/2 cups of water with 1/2 cup raw cashews and no coconut oil, everything else was the same. Unfortunately the actual cheeseball is no longer allowed in our house after a few tongue swelling incidents caused by coconut oil. I would like to try making it with Earth Balance in the future, but obviously Earth Balance doesn’t fit in with April All Natural. We poured the cheese sauce all over the broccoli and potatoes and it was the best thing ever.

If you haven’t tried this cheeseball yet, you’re seriously missing out. The flavor is spot on and the texture is fantastic. Maybe even worth another swollen tongue….

I’ll try to stay on top of my daily posts, but it is nearing the end of the semester, so bear with me!
