April All Natural Day 7

Day 7 was a tad more interesting than day 6 because I was only at school from 7:45 until 12:15, so I got to do stuff when I came home! For some reason when signing up for spring classes I decided it was a good idea to take chemistry at 8 in the morning. Don’t do it. While I am able to stay awake for it, my brain has already reached its capacity by the time my next class starts. At least I have a good 30 minutes in between to recuperate, right?

My day started off with a quick run and some apple pie oatmeal because, when you love a certain food (and it’s healthy), why not eat it all the time? Plus oatmeal keeps me nice and full until I get home for lunch, so yay oatmeal! Once I got home I had a big ole’ soba noodle salad and man it was delicious. It’s been so nice outside that my mom and I sat out in the backyard and ate our lunches in the sunshine.

I finally learned to start using a bigger bowl for these salads because they always end up overflowing and making a huge mess once I stir it all up!

The afternoon was spent weeding one of the beds in the backyard and planting our new rosemary bushes with a little bit of playing with Rory thrown in too. My mom is on spring break and weeding/mulching is her project for the week. We’ve been getting a lot done on it a lot earlier than usual! We also spent some time out in the front yard watching our little mama mallard duck, who we named Daffodil. She made herself a nice nest right up against the house under some rosemary bushes (we have a lot of rosemary). Through lots of research we’ve found out that she comes back and lays one egg per day, then comes back and incubates them all at the same time, so they all hatch at the same time. She is currently in the incubating period, so we are being extra careful about where we take Rory and not letting any kitties outside when she’s around.

I managed to get close enough to get a fairly good picture of her. She’s a cutie.

After cleaning all that dirt off my hands I was in need of a snack, so I made myself a piece of toast (the sprouted bread from Trader Joe’s is a-okay in terms of being all natural) with peanut butter, strawberry slices, and a drizzle of coconut nectar. Peanut butter and coconut nectar is one of my favorite combinations ever. I’ve literally been getting spoonfuls of peanut butter, putting coconut nectar on them, and just eating it off the spoon.

Not the most appetizing picture, but I wanted to eat it to badly to actually take the time to get a decent picture. I was hungry.

For dinner, it was Taco Tuesday!! This is the reason I love Tuesday so much. I made my favorite tofu scramble and Upton’s Naturals Chorizo Seitan (seitan is cool for all natural), and my mom made roasted garlicky potatoes. All of this got combined in some Trader Joe’s tortillas with some sliced avocado and salsa. It was fantastic. For a not-so-late night snack I had a banana and some spoonfuls of peanut butter. I like to have a snack around 8 or so at night so I’m not starving to death when I wake up to go for my run in the morning.
