I feel like these posts are starting to get a bit boring. I honestly don’t really do much on weekdays other than go to school, homework, and Rory wrangling. Wednesdays are long days just like Mondays, but instead of being in Chemistry lab for 3 hours, I get to sit in Earth Science lab for 3 hours. Although yesterday we got finished an hour early, so that was pretty exciting for me :P. Oh, and we talked about animal rights in social ethics, which mostly just made me mad. I have a hard time wrapping my head around people putting “humane” and “slaughter” in the same sentence… maybe that’s just me. I won’t get too far into that discussion though because I’m sure you don’t want to sit here and read a nice long rant about animal rights. There are plenty of those already out there.

So anyway, I started the day with my usual oatmeal with bananas, raisins, spices, and molasses. I think I love this one so much because I’m so addicted to bananas. And I only recently discovered how much I love molasses, so I’ve been putting it on almost everything I eat for breakfast. It just makes a warm bowl of oatmeal 10 times more comforting for some reason. Maybe because it reminds me of Christmas cookies…

Since Wednesdays are long just like Mondays, I took the same thing for lunch, but with an added banana because why not? I always love how many funny looks I get when I just casually whip out a sweet potato in the middle of a conversation or something. On Mondays I usually eat right outside the Chemistry lab classroom, so I get plenty of funny looks because, not only am I eating a plain sweet potato (which is apparently weird to most people??), I’m sitting in the hallway eating a sweet potato. At least I’m really not too worried about how “normal” I look, I mean I wear pajama pants with penguins all over them to class. Being normal is probably the least important thing ever.

It was a gloomy day, so I just came home and relaxed with my mom and watched a bit of TV on the IPad until it was time to make dinner. Not the most interesting day, but I’m always a bit drained after my long days at school. For dinner I made pancakes, which was probably the most fun part of my day. I played with the recipe I usually use and ended up making them the fluffiest pancakes I’ve ever made. The batter went a bit crazy. I should’ve used a bigger bowl.

IMG_7924I thought it might grow so much that it took over our entire kitchen! These were made with whole wheat pastry flour to make them all natural acceptable. I think this was my favorite batch of pancakes I’ve had in quite some time. Although I only started eating pancakes within the past 2 years. I used to hate them. I decided the reason I used to hate them was because I always equated pancakes with a box of bisquick or something, which is just nasty. Now I die for homemade pancakes from scratch.

Look at those fluff levels. These were topped with fresh strawberries and a strawberry sauce to make it look like a volcano because I learned about volcanoes in Earth Science lecture. We are currently trying to eat all of the strawberries in the freezer because strawberry picking season is fright around the corner! I think we are down to about 2 bags full and 1 jar full maybe? I’m so pumped for strawberry picking, it’s one of my favorite things to do. Ever.
