One of my favorite things about summer is all the fresh, local produce we load up on. Among all the various fruits and vegetables, peaches have always been a favorite. Going peach picking is definitely a highlight of the summer because, seriously, who doesn’t love a nice juicy peach fresh off the tree? Nobody. I get so excited while picking them that I can’t even wait until we get home to dig in and end up picking a couple off the tree and eating them like an apple while I continue to pick. Mmmmmm, peaches.

While we haven’t gone peach picking just yet (they aren’t quite ripe enough), we did get a giant half bushel of peaches from a local farm stand the other day and I’ve been in peachy heaven ever since! We froze a crap ton of the peaches and there were still even more ripening up on the counter!

While I will never grow tired of just simply biting into a nice juicy peach (I’m also usually just too lazy to bother peeling and cutting one), I decided to try throwing one into some oatmeal in the morning.

I only recently became quite the oatmeal lover and have started having it at least 3 days a week, if not more and this recipe just makes me love it even more! I even chopped up some peaches and froze them in little chunks, so I can still enjoy this oatmeal in the dead of winter when a nice bowl of steaming oatmeal and a cup of tea really hits the spot on a cold, dreary morning.

After some trial and error, I came up with a bowl of warm, sweet, and perfectly peachy oatmeal and boy, did I dig right in! I know warm oatmeal isn’t exactly a summertime breakfast, but just bear with me. The fresh peaches are really what make this so fantastic, they get all warm and soft and cinnamon-y and mmmmmm, pure deliciousness!

Peachy Oatmeal

Peach Pie Oatmeal

Serves 1

Ingredients:

  • 1/2 Cup Rolled Oats 
  • 1 Cup Non-Dairy Milk of Choice or Water*
  • 1/2 tsp. Vanilla
  • 1/2 tsp. Cinnamon
  • 1 Tbsp. Chia Seeds or Ground Flax Seeds (optional)
  • 1 Medium Sized Fresh Peach (or frozen peach chunks)
  • Pinch of Nutmeg
  • Maple Syrup**

 

Directions:

Dice the peach into bite sized chunks. In a small saucepan, combine the oats, liquid of choice, cinnamon, and chia seeds or flax seeds (if using). Bring the oats to a boil over medium heat, then add the peach chunks. When your oatmeal has reached your desired consistency, remove from heat, add the vanilla, give it a good stir,  and transfer to a bowl. Top with a light sprinkle of nutmeg, a drizzle of maple syrup, maybe a few pecans or walnuts, and a splash of your favorite non-dairy milk. Mix it all up and devour immediately for a trip to peachy heaven.

Notes:

*I like to cook mine in soy milk or hazelnut milk because it gives it a sweeter flavor. You could also do 1/2 cup milk and 1/2 cup water if you so desire

**You could also try agave or coconut nectar if you’re not a fan of maple syrup
