Anyone else’s tastebuds change with the seasons? I find myself craving more raw foods during the summer, when so much produce is in season. That being said, I also have a huge sweet tooth! Lately I’ve just been snacking on dates here and there, but that gets a little boring after a while. And thus began the search for a more interesting sweet, yet still healthy snack.

I still used dates as the binder and sweetener for these cookie dough bites, but they’re definitely more fun than just plain old dates! The ingredients are simple and these have quickly become one of my favorite things to snack on. Plus, they come together in a matter a minutes for quick and easy snackage. These cookie dough bites are perfect for taking to school or work for, on hikes for an energy boosting snack, or just when you’ve got a craving for something sweet. Ingredients:

Cookie Dough:

  • 2 Cups Rolled Oats
  • 1.5 Cups Pitted dates, soaked
  • 1 tsp vanilla
  • 3-4 Tablespoons water
  • 2 Tablespoons cacao nibs

Chocolate Drizzle:

  • 2 tsp refined coconut oil, melted
  • 2 Tablespoons pure maple syrup or agave
  • 1/4 Cup raw cacao powder

Directions:

Place the oats in the bowl of a food processor and pulse a few times to break up the oats a little. Add the dates, vanilla, and 3 tablespoons of water and process until a dough forms, adding more water as necessary. Add in the cacao nibs and pulse a few times to incorporate them into the dough. Using a tablespoon measure or cookie scoop, scoop the dough into little bites. You should get around 15 cookie dough bites.

For the chocolate, whisk together the coconut oil, cacao powder, and maple syrup until smooth. Drizzle the chocolate over the cookie dough bites and refrigerate to set the chocolate.
